16 large portobello or cremini mushrooms, stems removed

1 cup fresh spinach, chopped

1 cup marinated artichoke hearts, chopped

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Mushrooms: Clean the mushrooms with a damp paper towel. Remove the stems and set them aside for later use.

      Make the Filling: In a bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, and red pepper flakes. Mix until well combined. Season with salt and pepper to taste.

        Sauté the Stems: Finely chop the removed mushroom stems. In a skillet, heat olive oil over medium heat and add the chopped stems. Sauté for about 3-4 minutes until they are tender. Add this mixture to the filling and stir well.

          Stuff the Mushrooms: Spoon generous amounts of the filling into each mushroom cap, pressing it down slightly to ensure it's packed in well.
