4 large whole wheat tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup black beans, rinsed and drained

1/2 cup corn (frozen or canned)

1/2 cup diced bell peppers (red, yellow, and green for color)

1/2 cup sliced mushrooms

1 small zucchini, diced

1 tsp olive oil

1/2 tsp garlic powder

1/2 tsp chili powder

Salt and pepper to taste

Optional: Fresh cilantro for garnish

Prep the Filling: In a large mixing bowl, combine the black beans, corn, bell peppers, mushrooms, zucchini, garlic powder, chili powder, olive oil, salt, and pepper. Mix well to incorporate all the flavors.
