1 lb ground beef (or turkey for a lighter option)

1 onion, diced

2 cloves garlic, minced

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 (10 oz) can diced tomatoes with green chiles

1 packet taco seasoning

8 oz tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1/2 cup sliced jalapeños (optional)

Fresh cilantro, for garnish (optional)

Avocado, diced, for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, about 5-7 minutes. Add the diced onion and minced garlic, cooking until the onion is soft and translucent.

      Add Vegetables and Seasoning: Stir in the black beans, corn, diced tomatoes, and taco seasoning. Mix well and let it simmer for about 5 minutes until heated through.

        Layering the Casserole: In a greased 9x13-inch baking dish, layer half of the tortilla chips on the bottom. Spread half of the meat mixture over the chips, followed by a layer of sour cream and half of the cheddar and Monterey Jack cheeses. Repeat the layers: remaining tortilla chips, remaining meat mixture, sour cream, and top with the remaining cheese.

          Bake the Casserole: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

            Add Toppings: If desired, add sliced jalapeños on top during the last 5 minutes of baking for an extra kick.
