2 pounds baby potatoes, halved or quartered

4 tablespoons olive oil

5 cloves garlic, minced

2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried thyme)

1 teaspoon sea salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1 teaspoon smoked paprika (for an added kick)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C), ensuring it’s hot when you put your potatoes in for optimal crispiness.

    Prepare the Potatoes: In a large mixing bowl, combine the halved or quartered baby potatoes with olive oil, minced garlic, rosemary, thyme, sea salt, pepper, and smoked paprika if using. Toss until all potatoes are well coated.

      Arrange on Baking Sheet: Spread the seasoned potatoes in a single layer on a large baking sheet lined with parchment paper, ensuring they have enough space to roast evenly.

        Roasting Phase 1: Place the baking sheet in the preheated oven and roast for about 25 minutes.
