1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 cup broccoli florets

1 small onion, sliced

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup soy sauce (low sodium)

1/4 cup orange juice (freshly squeezed, if possible)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1/2 teaspoon red pepper flakes (adjust for spice preference)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Chicken: In a mixing bowl, toss the chicken pieces with cornstarch until evenly coated. This will give the chicken a crispy texture when cooked.

    Mix the Sauce: In a separate bowl, whisk together the soy sauce, orange juice, honey (or maple syrup), rice vinegar, and red pepper flakes. Set aside.

      Stir Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the chicken in a single layer and cook for about 4-5 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

        Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the sliced onion, red bell pepper, snap peas, and broccoli. Stir fry for about 3-4 minutes until the vegetables are tender-crisp.

          Add Aromatics: Add the minced garlic and grated ginger to the pan. Stir and cook for an additional 30 seconds until fragrant.

            Combine Everything: Return the cooked chicken to the pan and pour in the orange sauce. Stir well to combine and let it simmer for 2-3 minutes until the sauce slightly thickens and everything is heated through.
