Ingredients

For the Meatballs:

1 lb ground turkey

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

For the Marinara Sauce:

1 can (15 oz) crushed tomatoes

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon sugar (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Make the Meatballs:

    - In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, chopped parsley, Italian seasoning, red pepper flakes (if using), salt, and pepper. Mix everything gently until fully incorporated, being careful not to overmix.

      Form the Meatballs:

        - Using your hands, scoop about 1.5 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is shaped into meatballs (approximately 16-20 meatballs).

          Preheat the Air Fryer:

            - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

              Air Fry the Meatballs:

                - Place the meatballs in a single layer in the air fryer basket (you may need to cook in batches). Lightly spray the meatballs with olive oil spray. Cook for 12-15 minutes, turning halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F/74°C).

                  Prepare the Marinara Sauce:

                    - While the meatballs are cooking, heat olive oil in a medium saucepan over medium heat. Add chopped onion and sauté for 5 minutes until translucent. Add minced garlic and sauté for another minute until fragrant.

                      Simmer the Sauce:

                        - Stir in the crushed tomatoes, dried oregano, sugar (if using), and season with salt and pepper. Bring to a simmer and let it cook for about 10-15 minutes, stirring occasionally, allowing the flavors to meld together.

                          Combine and Serve:

                            - Once the meatballs are cooked, gently add them to the marinara sauce. Stir to coat the meatballs evenly. Serve hot over whole grain pasta, spiralized veggies, or in a sub sandwich. Garnish with fresh basil if desired.
