1 pound large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 medium lemon (zest and juice)

1/4 cup olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 teaspoon dried oregano

Fresh parsley, chopped (for garnish)

Cooked rice or quinoa (for serving, optional)

Instructions
 

Prep the Shrimp: In a mixing bowl, combine the shrimp, minced garlic, lemon juice, lemon zest, olive oil, red pepper flakes, oregano, salt, and pepper. Toss to coat the shrimp well. Let it marinate for about 15 minutes in the refrigerator.

    Cook the Broccoli: In a large skillet or pan, heat a tablespoon of olive oil over medium-high heat. Once hot, add the broccoli florets and sauté for about 3-4 minutes until they turn vibrant green and start to soften. Remove the broccoli from the pan and set aside.

      Cook the Shrimp: In the same pan, add the marinated shrimp along with all the marinade. Cook for 3-4 minutes on one side, until the shrimp starts to turn pink, then flip and cook for another 2-3 minutes until fully cooked and opaque.

        Combine & Finish: Once the shrimp is cooked, return the broccoli to the pan. Toss everything together to evenly coat with the garlic and lemon mixture. Cook for an additional 1-2 minutes to heat through.

          Serve: Transfer the shrimp and broccoli to a serving platter, garnishing with fresh parsley. Serve immediately with a side of cooked rice or quinoa if desired.
