1 lb (450g) beef stew meat, cut into 1-inch pieces

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 bell pepper, diced (any color)

1 cup frozen peas

4 medium potatoes, diced

4 cups beef broth

1 cup heavy cream

2 tablespoons Worcestershire sauce

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Sear until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside.

    Sauté the Veggies: In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are starting to soften. Stir in the bell pepper and sauté for another 2 minutes.

      Combine Ingredients: Return the beef to the pot. Add the diced potatoes, beef broth, Worcestershire sauce, and tomato paste. Sprinkle in the dried thyme and rosemary. Stir everything well to combine.

        Simmer: Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 45-50 minutes, or until the beef is tender and the potatoes are cooked through, stirring occasionally.

          Make it Creamy: Once the beef and veggies are tender, stir in the heavy cream and frozen peas. Allow the stew to simmer for an additional 5-10 minutes, until heated through. Adjust seasoning with salt and pepper as necessary.
