Pressure Cooker Cheesy Chicken & Rice

1 lb (450 g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice, rinsed

1 small onion, finely chopped

3 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup whole milk

1 cup shredded sharp cheddar cheese

1 cup frozen peas and carrots mix

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics:

    Set the pressure cooker to the sauté function. Add the olive oil and heat until shimmering. Add the chopped onion and garlic, sautéing for about 2-3 minutes until they become translucent and fragrant.

      Brown the Chicken:

        Add the chicken pieces to the pot. Sprinkle with paprika, onion powder, garlic powder, salt, and pepper. Cook for about 5 minutes, stirring occasionally, until the chicken is no longer pink.

          Add Rice and Liquid:

            Pour in the rinsed rice, followed by the chicken broth and whole milk. Stir to combine all ingredients ensuring the rice is submerged evenly in the liquid.

              Cook under Pressure:

                Close the pressure cooker lid securely and set it to high pressure. Cook for 10 minutes. Once the cooking time is up, let the pressure release naturally for 5 minutes, then carefully use the quick release to release any remaining pressure.

                  Incorporate Cheese and Vegetables:

                    Open the lid and stir the mixture, breaking apart any clumps of rice. Add the frozen peas and carrot mix, and the shredded cheddar cheese. Stir until the cheese is melted and everything is well combined.

                      Serve and Garnish:

                        Taste and adjust seasoning if needed. Scoop the cheesy chicken and rice into bowls and garnish with fresh parsley before serving.
