1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes

¼ cup extra-virgin olive oil

Juice of 2 large lemons (about ¼ cup)

Zest of 1 lemon

3 cloves garlic, minced

1 tbsp honey

1 tsp smoked paprika

1 tsp dried oregano

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior)

Instructions
 

Prepare Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, honey, smoked paprika, oregano, thyme, salt, and pepper until well combined.

    Marinate Chicken: Place the chicken cubes in a large resealable plastic bag or bowl. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag (or cover the bowl) and refrigerate for at least 1 hour, preferably 2-4 hours for maximum flavor.

      Prepare Vegetables: While the chicken marinates, chop the bell peppers and red onion into 1-inch pieces. Set aside.

        Assemble Skewers: Preheat your grill to medium-high heat. Thread the marinated chicken pieces and the vegetables onto the skewers, alternating between chicken and vegetables for a colorful presentation.

          Grill Skewers: Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F) and has nice grill marks.
