1 cup gluten-free all-purpose flour (ensure it contains xanthan gum)

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon baking powder

1 tablespoon fresh herbs (like parsley, dill, or chives), finely chopped (optional)

Olive oil or cooking spray for frying

Instructions
 

Combine Mixture: In a mixing bowl, add the cottage cheese, gluten-free flour, eggs, garlic powder, onion powder, salt, and baking powder. Mix well until all ingredients are combined into a smooth batter.

    Add Herbs: If desired, stir in the fresh herbs to enhance the flavor.

      Heat Pan: Use a non-stick skillet or frying pan. Heat it over medium heat and lightly grease it with olive oil or cooking spray.

        Cook Flatbread: Pour about 1/4 cup of the batter onto the hot skillet for each flatbread. Use the back of a spatula to gently spread it into a circle, about 1/4 inch thick.

          Flip and Brown: Cook for about 3-4 minutes on one side or until the edges begin to look set and the bottom is golden brown. Carefully flip the flatbread and cook for another 3-4 minutes until the other side is also golden.

            Repeat: Remove the cooked flatbread from the skillet and keep it warm in a clean kitchen towel. Repeat the process with the remaining batter, adding more oil as needed.
