1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized into zoodles

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Juice of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Freshly grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zoodles: Begin by spiralizing the zucchinis into zoodles. Set them aside on a clean kitchen towel to absorb excess moisture.

    Cook the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once melted and bubbly, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.

      Add Shrimp: Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes, or until the shrimp turn pink and opaque, stirring occasionally.

        Add Zoodles: Push the shrimp to one side of the skillet and add the remaining 2 tablespoons of butter. Once melted, add the zoodles, tossing everything together gently. Sauté for another 2-4 minutes until the zoodles are just tender but still have a slight crunch.
