2 cups cooked chicken, shredded (rotisserie chicken works great)

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/4 cup breadcrumbs (optional for a crunchy topping)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and set aside.

      Mix the Cheesy Filling: In a large bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and black pepper. Stir in the sautéed spinach and the shredded chicken until well mixed.

        Assemble the Bake: Transfer the chicken and spinach mixture into a greased baking dish (about 9x13 inches). Spread it out evenly. Top with the remaining mozzarella cheese and, if using, sprinkle breadcrumbs on top for added crunch.
