30-Minute Garlic Parmesan Shrimp Pasta

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

3 tablespoons unsalted butter

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Zest and juice of 1 lemon

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, combine 2 tablespoons of butter and 2 tablespoons of olive oil. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and are cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

      Make the Garlic Sauce: In the same skillet, lower the heat to medium and add the remaining tablespoon of butter. Once melted, add the minced garlic and red pepper flakes, stirring until fragrant (about 1 minute).

        Add Tomatoes: Stir in the halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.

          Combine Ingredients: Return the cooked shrimp to the skillet. Add the drained pasta and toss to combine. If the mixture seems dry, gradually add reserved pasta water until desired consistency is reached.

            Finish with Cheese and Seasoning: Stir in the grated Parmesan cheese, lemon zest, and juice. Adjust seasoning with additional salt and pepper, if desired.

              Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve immediately with extra Parmesan cheese on the side, if desired.
