1 lb (450g) beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium zucchini, sliced into half-moons

1 cup broccoli florets

2 cloves garlic, minced

1-inch piece ginger, minced

1 cup snap peas, trimmed

3 green onions, chopped

2 tablespoons oyster sauce

1 tablespoon sesame oil

Cooked rice or noodles, for serving

Sesame seeds, for garnish (optional)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef, soy sauce, and cornstarch. Mix well and let it marinate for about 10 minutes while you prep the vegetables.

    Prepare the Veggies: Wash and slice the bell peppers, zucchini, broccoli, and snap peas. Mince the garlic and ginger, and chop the green onions.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 3-4 minutes until browned. Remove and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, frying for about 30 seconds until fragrant. Add the bell peppers, zucchini, broccoli, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

          Combine Everything: Return the cooked beef to the skillet with the vegetables. Add the oyster sauce and sesame oil, tossing everything together to combine. Cook for an additional 2-3 minutes until heated through.

            Serve: Remove from heat and garnish with chopped green onions and sesame seeds, if desired. Serve immediately over rice or noodles.
