2 medium sweet potatoes

1 cup oats (old-fashioned or quick)

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the sweet potatoes: Wash and peel the sweet potatoes. Cut them into small cubes and steam or boil them until they are fork-tender (approximately 15 minutes). Drain and let them cool slightly.

      Mash the sweet potatoes: In a large mixing bowl, mash the cooked sweet potatoes until smooth. You should have about 1.5 to 2 cups of mashed sweet potatoes.

        Mix the other ingredients: Add the oats, almond butter, honey (or maple syrup), and cinnamon to the mashed sweet potatoes. Stir well until all ingredients are thoroughly combined and form a sticky mixture.

          Form the bites: Using your hands, take small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the balls onto the prepared baking sheet, leaving a little space between each bite.
