Ingredients

1 large lemon (juice and zest)

1 cup granulated sugar

4 large eggs

1/2 cup unsalted butter, softened

1 teaspoon vanilla extract

2 cups heavy whipping cream

2 tablespoons powdered sugar

1 package (10 ounces) ladyfinger cookies

Fresh berries (such as strawberries and blueberries) for garnish

Fresh mint leaves for garnish

Instructions

Make the Lemon Curd: In a medium saucepan, whisk together 1 large lemon juice, zest, 1 cup granulated sugar, and 4 large eggs. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 8-10 minutes). Remove from heat and whisk in 1/2 cup softened butter and 1 teaspoon vanilla extract. Strain through a fine sieve into a bowl and let cool completely.

Prepare the Whipped Cream: In a large mixing bowl, beat 2 cups heavy whipping cream and 2 tablespoons powdered sugar using an electric mixer until soft peaks form. Be careful not to overwhip; the cream should be fluffy and smooth.

Assemble the Trifle: In a trifle dish or individual serving glasses, start by layering ladyfinger cookies at the bottom. Spoon a layer of the cooled lemon curd over the ladyfingers, followed by a generous layer of whipped cream.

Repeat the Layers: Repeat the layering process (ladyfinger cookies, lemon curd, whipped cream) until you fill the dish, finishing with whipped cream on top.

Chill and Garnish: Cover the assembled trifle with plastic wrap and refrigerate for at least 2 hours to let the flavors meld. Before serving, garnish with fresh berries and mint leaves for a vibrant presentation.
