Air Fryer BBQ Meatballs with Sweet Potato Fries

For the BBQ Meatballs:

1 lb ground beef (or turkey for a leaner option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup BBQ sauce (plus extra for glazing)

2 cloves garlic, minced

1 egg, lightly beaten

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Sweet Potato Fries:

2 medium sweet potatoes, cut into fries

2 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

Salt and pepper, to taste

Optional: 1/2 tsp cayenne pepper (for a spicy kick)

Instructions
 

Prepare the Sweet Potato Fries:

    - Preheat the air fryer to 400°F (200°C) for about 5 minutes.

      - In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, pepper, and cayenne (if using) until evenly coated.

        - Place the fries in a single layer in the air fryer basket. Cook them for 15-20 minutes, shaking halfway through, until crispy and golden brown. Remove and set aside when done.

          Make the BBQ Meatballs:

            - In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, BBQ sauce, minced garlic, beaten egg, onion powder, smoked paprika, salt, and pepper.

              - Mix all the ingredients until well combined but do not overwork the meat.

                - Shape the mixture into 1.5-inch meatballs and place them on a plate or baking sheet.

                  Cook the Meatballs:

                    - Once the fries are done, return the air fryer to 400°F (200°C).

                      - Place the meatballs in a single layer in the air fryer basket, being careful not to overcrowd them. You may need to do this in batches.

                        - Cook for 10-12 minutes, turning halfway through for even cooking. If desired, brush or drizzle additional BBQ sauce on the meatballs during the last few minutes of cooking.

                          Serve:

                            - Transfer the crispy sweet potato fries and BBQ meatballs to a serving platter.

                              - Garnish with freshly chopped parsley.

                                - Serve with additional BBQ sauce on the side for dipping.
