Ingredients

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

Olive oil spray (or your preferred cooking spray)

Instructions

Prepare the Broccoli:

    - Steam the broccoli florets for about 3-4 minutes until slightly tender but still vibrant green. Drain and let cool for a few minutes. Chop into small, bite-sized pieces.

      Mix the Filling:

        - In a large bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, black pepper, and salt. Mix everything until well incorporated.

          Bind the Mixture:

            - Crack the eggs into the mixture and stir until well combined. The mixture should hold together; if it seems too dry, add a little bit of water until the desired consistency is reached.

              Form the Poppers:

                - Scoop out approximately 1 tablespoon of the mixture and shape it into small balls or patties. Place them on a plate or tray lined with parchment paper.

                  Air Fry the Poppers:

                    - Preheat your air fryer to 380°F (193°C) for about 5 minutes. Once preheated, lightly spray the air fryer basket with olive oil spray.

                      - Arrange the broccoli mixture balls in a single layer in the basket, ensuring they aren’t crowded. You may need to do this in batches depending on your air fryer size.

                        Cook to Perfection:

                          - Air fry the poppers for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

                            Serve and Enjoy:

                              - Once done, remove them from the air fryer and let them cool for a couple of minutes. Serve warm with your favorite dipping sauce, such as ranch or marinara!
