Ingredients

1 lb chicken breast, cut into bite-sized cubes

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

½ cup buffalo sauce (plus extra for serving)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a medium bowl, combine the chicken cubes and buttermilk. Cover and let it marinate in the refrigerator for at least 30 minutes to an hour to tenderize the chicken.

Prepare the Breading: In a separate bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.

Coat the Chicken: Remove the marinated chicken from the refrigerator. Dip each chicken piece into the flour mixture, ensuring it’s well-coated. Shake off any excess flour.

Air Fryer Setup: Preheat your air fryer to 400°F (200°C) for about 5 minutes. Lightly spray the air fryer basket with cooking spray or brush with a bit of olive oil.

Air Fry the Chicken Bites: Arrange the coated chicken bites in a single layer in the air fryer basket. Lightly spray the tops with olive oil. Air fry for about 10-12 minutes, shaking the basket halfway through until they are golden brown and cooked through.

Toss in Buffalo Sauce: Once cooked, transfer the chicken bites to a large bowl. Drizzle the buffalo sauce over them and toss gently until evenly coated.

Serve: Plate the buffalo chicken bites, garnishing with fresh parsley. Serve with extra buffalo sauce on the side for dipping, along with celery sticks and ranch or blue cheese dressing if desired.
