For the Fish:

1 lb white fish fillets (such as cod or tilapia)

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1/2 tsp cayenne pepper

1/2 tsp salt

1/2 tsp black pepper

2 eggs, beaten

1 cup panko breadcrumbs

Cooking spray

For the Lime Slaw:

2 cups green cabbage, shredded

1 cup red cabbage, shredded

1/2 cup carrots, grated

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tbsp honey

1 tbsp olive oil

Salt and pepper to taste

For Serving:

Corn tortillas

Sliced avocado

Lime wedges

Prepare the Lime Slaw: In a large bowl, combine the green cabbage, red cabbage, grated carrots, and chopped cilantro. In a small bowl, whisk together the lime juice, honey, olive oil, salt, and pepper. Pour the dressing over the slaw and toss until mixed. Set aside to let the flavors marry while you prepare the fish.

    Prep the Fish: Pat the fish fillets dry with paper towels. Cut them into strips, about 1 inch wide.

      Breading Setup: In three separate shallow dishes, place the flour mixed with paprika, garlic powder, cayenne pepper, salt, and black pepper in the first dish. In the second dish, have the beaten eggs. In the third dish, add the panko breadcrumbs.

        Coat the Fish: Dip each fish strip first into the seasoned flour, shaking off any excess. Then, dip it into the beaten eggs to coat, followed by the panko breadcrumbs. Press gently to ensure good coverage.

          Preheat the Air Fryer: Preheat the air fryer to 390°F (200°C) for about 5 minutes.

            Air Fry the Fish: Lightly spray the air fryer basket with cooking spray. Place the breaded fish strips in the basket in a single layer, avoiding overcrowding (you may need to do this in batches). Spray the tops of the fish lightly with cooking spray. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.

              Warm the Tortillas: While the fish is cooking, warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.

                Assemble the Tacos: Take a warm tortilla and add a couple of crispy fish strips. Top generously with lime slaw, a few slices of avocado, and a squeeze of fresh lime juice.
