2 large fresh artichokes

1 lemon (juiced and zested)

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (panko works best for extra crunch)

2 cloves garlic (minced)

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

Fresh parsley (for garnish)

Prepare the Artichokes: Start by cutting the top third off each artichoke and trimming the stem to about an inch. Use kitchen scissors to snip off the sharp tips of the leaves. Rinse the artichokes under cold water to remove any dirt and debris.

    Make the Lemon Mixture: In a small bowl, combine the lemon juice, lemon zest, minced garlic, olive oil, dried oregano, red pepper flakes, salt, and pepper. Mix well to create a marinade.

      Coat the Artichokes: Rub the lemon mixture generously all over the artichokes, making sure to get between the leaves. Use a brush or your fingers to coat thoroughly.

        Prepare the Coating: In another bowl, mix the grated Parmesan cheese and breadcrumbs. Add a pinch of salt and pepper for seasoning, and mix until well combined.

          Coat the Artichokes Again: Sprinkle the breadcrumb and cheese mixture over the artichokes, pressing gently so the coating adheres well.
