Ingredients

1 pound ground turkey or chicken

1/2 cup breadcrumbs (panko preferred)

1/4 cup finely chopped green onions

1/4 cup fresh pineapple, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

1 large egg, beaten

1/4 cup teriyaki sauce (plus extra for glazing)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon black pepper

1 teaspoon salt

Sesame seeds and additional chopped green onions for garnish

Instructions

Mix the Ingredients: In a large mixing bowl, combine the ground turkey or chicken, breadcrumbs, finely chopped green onions, pineapple, minced garlic, grated ginger, beaten egg, teriyaki sauce, soy sauce, sesame oil, black pepper, and salt. Mix until all ingredients are well combined.

Form the Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper. You should get about 20-24 meatballs.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Cook the Meatballs: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the meatballs in the basket in a single layer, leaving space between each meatball. You might need to cook them in batches. Air fry for 10-12 minutes, shaking the basket halfway through, until they are golden brown and cooked through.

Glaze the Meatballs: Once the meatballs are cooked, take them out of the air fryer and brush them with a little extra teriyaki sauce for added glaze and flavor.

Serve: Transfer the meatballs to a serving platter. Sprinkle with sesame seeds and additional chopped green onions for garnish. Serve immediately with rice or in lettuce wraps, and enjoy the tropical flavors!
