Ingredients

For the Sweet Potato Fries:

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon sea salt (adjust to taste)

1/4 teaspoon black pepper

Optional: 1 tablespoon cornstarch (for extra crispiness)

For the Dipping Sauce:

1 ripe avocado

1 tablespoon lime juice

1/4 cup Greek yogurt or sour cream

1 clove garlic, minced

1/4 teaspoon cayenne pepper (adjust for heat preference)

Salt to taste

Fresh cilantro leaves, for garnish (optional)

Instructions

Prepare the Sweet Potatoes:

    - Peel the sweet potatoes and cut them into thin strips, about 1/4 inch thick. Aim for uniformity to ensure even cooking.

      Soak for Crispiness (optional):

        - For even crispier fries, soak the strips in cold water for 30 minutes to an hour to draw out excess starch. Drain and pat dry thoroughly with a clean towel.

          Season the Fries:

            - In a large mixing bowl, combine olive oil, paprika, garlic powder, onion powder, sea salt, black pepper, and cornstarch (if using). Add the sweet potato fries and toss until evenly coated.

              Preheat the Air Fryer:

                - Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

                  Cook the Fries:

                    - Place a single layer of coated sweet potato fries in the air fryer basket. Avoid overcrowding to ensure they cook evenly. Cook for 15-20 minutes, tossing halfway through, until golden and crispy.

                      Prepare the Dipping Sauce:

                        - While the fries are cooking, prepare the dipping sauce. In a medium bowl, mash the avocado with a fork until smooth. Add lime juice, Greek yogurt or sour cream, minced garlic, cayenne pepper, and salt. Mix until combined and creamy. Adjust the seasoning to taste.

                          Serve:

                            - Once the fries are cooked, remove them from the air fryer and let them cool for a couple of minutes. Serve hot with the zesty avocado dipping sauce drizzled with fresh cilantro if desired.
