Air Fryer Sweet Potato Nacho Bites

2 medium sweet potatoes, peeled and sliced into 1/4-inch rounds

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

1 cup shredded sharp cheddar cheese (or a dairy-free alternative)

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh, frozen, or canned)

1 jalapeño, sliced (optional)

Fresh cilantro for garnish

Avocado crema or sour cream for serving

Instructions
 

Preheat the Air Fryer: Set the air fryer to 400°F (200°C) for about 5 minutes so it’s hot and ready for the sweet potatoes.

    Prepare the Sweet Potatoes: In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, and a sprinkle of salt and pepper until they are evenly coated.

      Air Fry the Sweet Potatoes: Place the sweet potato rounds in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to do this in batches. Air fry for 10-12 minutes, flipping halfway through, until they are crispy and lightly browned.

        Add the Toppings: Once the sweet potatoes are done, remove them from the air fryer and carefully place half of them back into the basket. Sprinkle half of the cheese evenly over the rounds, then add the black beans, corn, and jalapeño slices. Top with the remaining cheese.

          Melt the Cheese: Return the basket to the air fryer and cook for an additional 3-4 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Carefully transfer the nacho bites to a serving platter. Garnish with fresh cilantro and serve with avocado crema or sour cream on the side.
