2 medium sweet potatoes, peeled and diced

1 cup breadcrumbs (panko or regular)

1/2 cup grated Parmesan cheese (optional)

1/4 cup all-purpose flour (or almond flour for gluten-free)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Cooking spray or olive oil spray

Prep the Sweet Potatoes: Start by boiling the diced sweet potatoes in salted water for about 15 minutes or until fork-tender. Drain and let them cool slightly.

    Mash & Mix: In a large bowl, mash the cooked sweet potatoes using a fork or a potato masher until smooth. Allow to cool for a few minutes before adding the other ingredients.

      Combine Ingredients: Add the breadcrumbs, Parmesan cheese, flour, eggs, garlic powder, onion powder, paprika, salt, and pepper into the bowl with the mashed sweet potatoes. Mix until everything is well combined.

        Form the Nuggets: Use your hands to form the sweet potato mixture into small nugget shapes, about 1-2 inches in size. You can also use a cookie scoop for more uniformity.

          Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
