Ingredients
  

For the Veggie Burgers:

1 can (15 oz) black beans, drained and rinsed

1 cup cooked quinoa

½ cup grated carrots

½ cup breadcrumbs (whole wheat recommended)

¼ cup finely chopped red onion

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 tbsp olive oil

1 egg (or flax egg for vegan option: 1 tbsp ground flaxseed mixed with 2.5 tbsp water)

For the Avocado Spread:

1 ripe avocado

1 tbsp lemon juice

1 clove garlic, minced

Salt and pepper to taste

Optional: 1 tbsp chopped cilantro or parsley for garnish

For Serving:

Whole grain burger buns

Lettuce leaves

Tomato slices

Pickles (optional)

Instructions
 

Prepare the Veggie Burger Mixture:

    - In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

      - Add the cooked quinoa, grated carrots, breadcrumbs, chopped red onion, minced garlic, cumin, smoked paprika, salt, pepper, olive oil, and egg (or flax egg) to the beans. Mix until all ingredients are well combined.

        Form the Patties:

          - Divide the mixture into 4 equal portions and shape each portion into a burger patty, about ¾-inch thick. If the mixture is too moist, add a little more breadcrumbs. Place the patties on a plate.

            Preheat the Air Fryer:

              - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                Air Fry the Veggie Burgers:

                  - Lightly spray the air fryer basket with cooking spray or brush with a little olive oil. Carefully place the patties in the basket, making sure not to overcrowd (you may need to do this in batches).

                    - Air fry the patties for 10-12 minutes, flipping them halfway through, until they are crispy and heated through.
