Air Fryer Veggie Quesadillas for Quick Dinners

4 large flour tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 cup mixed vegetables (bell peppers, onions, zucchini, and spinach work great)

1 teaspoon olive oil

1 teaspoon taco seasoning (or to taste)

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Salsa and sour cream, for serving

Instructions
 

Preparation of Vegetables:

    - Wash and chop the mixed vegetables into small, uniform pieces. You can use a mix of your favorites or what you have on hand.

      Season the Veggies:

        - In a bowl, combine the chopped vegetables with olive oil, taco seasoning, salt, and pepper. Toss well to ensure the vegetables are evenly coated with the seasoning.

          Assemble the Quesadillas:

            - Lay one flour tortilla flat on a clean surface. Sprinkle a layer of shredded cheese evenly over half of the tortilla, then add a generous portion of the seasoned veggies. Top with another layer of cheese. Fold the tortilla in half.

              Repeat:

                - Repeat the procedure with the remaining tortillas and filling until you have 4 folded quesadillas.

                  Preheat the Air Fryer:

                    - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                      Air Fry the Quesadillas:

                        - Lightly mist the air fryer basket with cooking spray or brush it with a little oil. Place two quesadillas in the basket (do not overcrowd) and spray the tops lightly with more cooking oil.

                          - Cook for 8-10 minutes, flipping halfway through, until the tortillas are golden and crispy, and the cheese is melted.

                            Serve:

                              - Remove the quesadillas from the air fryer and cut them into wedges. Garnish with fresh cilantro if desired. Serve hot with salsa and sour cream on the side.
