Ingredients

4 large eggs

2 cups whole milk

1 cup granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 tablespoon cornstarch (optional, for thicker custard)

Cinnamon, for sprinkling (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, whisk together the eggs and sugar until well combined and slightly frothy.

Slowly add the whole milk while continuing to whisk to incorporate smoothly.

Stir in the vanilla extract, nutmeg, salt, and if using, the cornstarch to the mixture for added thickness.

Pour the custard mixture into a greased 2-quart baking dish or several small custard cups.

Place the baking dish or cups in a larger roasting pan. Fill the roasting pan with water until it reaches halfway up the sides of the custard dish—this will create a water bath for even baking.

Bake in the preheated oven for 45-55 minutes, or until the custard is set but still slightly jiggly in the center. You can check for doneness by inserting a knife or toothpick; it should come out clean.

Once baked, remove the custard from the oven and let it cool for about 10 minutes. If desired, sprinkle a light dusting of cinnamon over the top before serving.

Serve warm or chilled, garnished with whipped cream or fresh fruit if desired. Enjoy this Amish classic!
