2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

2 cups apple cider

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup apple slices (Granny Smith or Honeycrisp are ideal)

1 tablespoon apple cider vinegar

1 tablespoon unsalted butter

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. When the oil is hot, add the chicken to the skillet and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, reduce the heat to medium. Add the sliced onion and cook for about 3-4 minutes until they soften. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
