1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp nutmeg (optional)

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk (or milk with 1 tsp vinegar)

1 ½ cups peeled and diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

2 tbsp coarse sugar for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

      Cream the Butters and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and light, about 3 minutes with an electric mixer.

        Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until combined; do not overmix.

            Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) with a spatula until evenly distributed throughout the batter.

              Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle coarse sugar on top for an extra crunch.

                Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.

                  Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
