Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 medium apple, finely diced (preferably a sweet variety like Fuji or Honeycrisp)

1/2 cup almond butter (or any nut butter of choice)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped nuts (such as walnuts or pecans) - optional

1/2 cup raisins or dried cranberries - optional

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Combine Dry Ingredients: In a large bowl, mix together the rolled oats, baking powder, ground cinnamon, and salt. If adding nuts and dried fruits, stir them in as well.

Mix Wet Ingredients: In a separate bowl, blend the almond butter, applesauce, honey (or maple syrup), and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet ingredients into the dry oat mixture. Stir well until everything is thoroughly combined. Gently fold in the diced apples.

Transfer to Baking Pan: Pour the mixture into the prepared baking pan. Use a spatula to smooth out the top evenly.

Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool and Slice: Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper. Let them cool completely on a wire rack before slicing into squares or bars.

Serve and Store: Enjoy these delicious Apple Cinnamon Oat Bars as a snack or breakfast on the go! They can be stored in an airtight container at room temperature for up to a week, or in the fridge for up to two weeks.
