Ingredients

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon allspice

1/2 cup finely chopped dried apples

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, allspice, and a pinch of salt. Stir until well combined.

Blend Wet Ingredients: In another bowl, mix the almond butter, applesauce, honey (or maple syrup), and vanilla extract. Whisk until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry mixture. Stir with a spatula until all the ingredients are well incorporated. The mixture should be sticky but moldable.

Add Dried Fruits and Nuts: Gently fold in the chopped dried apples and walnuts (or pecans) until evenly distributed throughout the mixture.

Form Energy Balls: Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the formed energy ball on a parchment-lined baking sheet. Repeat with the rest of the mixture until all are formed.

Chill: Once you’ve shaped all the energy balls, refrigerate them for at least 30 minutes to let them firm up.

Serve and Store: Enjoy immediately or store the energy balls in an airtight container in the refrigerator for up to a week. You can also freeze them for longer storage—just thaw before enjoying!
