3 medium-sized apples (preferably a mix of tart and sweet, like Granny Smith and Honeycrisp), thinly sliced

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, grated

1/2 cup cilantro leaves, chopped (optional)

1/4 cup red onion, thinly sliced

1/2 cup Greek yogurt (for creaminess)

2 tablespoons apple cider vinegar

2 tablespoons honey or maple syrup

1 tablespoon Dijon mustard

Salt and pepper, to taste

1/4 cup walnuts or pecans, chopped (for crunch)
