Ingredients

2 cups fresh strawberries, hulled and sliced

2 cups fresh apples, cored and diced (preferably Granny Smith or Honeycrisp)

1 cup mini marshmallows

1 cup cream cheese, softened

½ cup Greek yogurt (plain or vanilla)

¼ cup powdered sugar

1 tsp vanilla extract

Juice of 1 lemon (to prevent apple browning)

¼ cup crushed graham crackers (for topping)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the fruit: In a large mixing bowl, combine the sliced strawberries and diced apples. Squeeze the lemon juice over the fruit to enhance flavor and prevent browning. Gently mix to coat the fruit with lemon juice.

Make the cheesecake mixture: In a separate bowl, beat the softened cream cheese until smooth and creamy. Add the Greek yogurt, powdered sugar, and vanilla extract. Mix until well combined and creamy.

Combine ingredients: Carefully fold the chopped fruit and mini marshmallows into the cheesecake mixture. Make sure everything is evenly coated without breaking the fruit pieces.

Chill the salad: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.

Serve: Once chilled, give the salad a gentle stir. Spoon the fruit salad into individual serving bowls or a large serving dish. Sprinkle crushed graham crackers over the top for added crunch.

Garnish: If desired, garnish with fresh mint leaves for a pop of color and a hint of freshness.

Enjoy! Serve immediately or keep it chilled in the refrigerator until ready to serve.
