12 oz (340g) pasta (spaghetti or linguine)

1 lb (450g) fresh asparagus, trimmed and cut into 2-inch pieces

3 cloves garlic, minced

1 small onion, finely chopped

Zest and juice of 2 large lemons

1/2 cup (120ml) vegetable or chicken broth

1/2 cup (120ml) heavy cream

1/2 cup (50g) grated Parmesan cheese (plus extra for serving)

3 tablespoons extra-virgin olive oil

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain, reserving about 1 cup of pasta water, and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the Asparagus: Toss in the asparagus pieces and cook for about 5-7 minutes, or until they are tender yet slightly crisp, stirring occasionally.

        Make the Sauce: Pour in the vegetable or chicken broth and bring to a simmer. Add the lemon juice and zest, followed by the heavy cream. Stir well to combine and let it cook for 3-4 minutes until the sauce thickens slightly.

          Combine with Pasta: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the mixture seems dry, gradually add reserved pasta water until the desired consistency is reached.

            Finish with Cheese: Stir in the grated Parmesan cheese, mixing until melted and well combined. Season with salt and black pepper to taste.
