Avocado Deviled Eggs with Bacon

6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 tablespoon fresh lime juice

Salt and pepper, to taste

4 slices of cooked bacon, crumbled

1 tablespoon fresh chives, finely chopped (for garnish)

Paprika, for garnish

Instructions
 

Hard Boil the Eggs: Place the eggs in a saucepan and cover them completely with cold water. Bring to a boil over high heat, then cover the pot, remove it from the heat, and let it sit for 10-12 minutes.

    Prepare the Eggs: After the eggs have cooled, transfer them to an ice bath for 5 minutes. Once chilled, peel the eggs under cold running water for easier peeling.

      Slice and Scoop: Slice the hard-boiled eggs in half lengthwise. Carefully scoop out the yolks into a mixing bowl and place the egg whites on a serving platter.

        Make the Avocado Mixture: To the mixing bowl with the yolks, add the ripe avocado, mayonnaise, Dijon mustard, lime juice, salt, and pepper. Mash the mixture until smooth and creamy.

          Add Bacon: Gently fold in most of the crumbled bacon, reserving a small amount for garnish.

            Fill the Egg Whites: Using a spoon or piping bag, fill each egg white half with the avocado mixture.

              Garnish: Top each filled egg with the reserved crumbled bacon, a sprinkle of paprika, and a few chopped chives.
