2 ripe avocados, halved and pitted

1 (12 oz) can of tuna in water, drained

1/4 cup Greek yogurt (or mayonnaise for a creamier option)

1 tablespoon Dijon mustard

1 tablespoon freshly squeezed lemon juice

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/4 cup cherry tomatoes, diced

1/4 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup chopped fresh parsley

8 large leaves of romaine or butter lettuce (for wrapping)

Instructions
 

Prepare the Avocados: In a medium bowl, scoop the flesh of the avocados into a mixing bowl, making sure to keep the skins intact for serving. Set aside the avocado skins for later.

    Mix the Tuna Salad: Add the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, garlic powder, onion powder, a pinch of salt, and pepper to the bowl with the avocado flesh.
