3 cloves garlic, minced

1 bell pepper (red or yellow), chopped

1 cup cherry tomatoes, halved

1 cup frozen corn

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 cups baby spinach

1 cup low-sodium chicken broth

1 cup cooked quinoa or rice (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, seasoning with salt and black pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the chopped onion and cook for about 3 minutes until it begins to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Peppers and Tomatoes: Incorporate the chopped bell pepper and halved cherry tomatoes into the skillet. Cook for 4-5 minutes until the peppers have softened.

        Combine Ingredients: Return the cooked chicken to the skillet. Add the frozen corn, smoked paprika, Italian seasoning, and chicken broth. Bring to a simmer and cook for 5-7 minutes, allowing the flavors to meld together.
