Bacon-Wrapped Stuffed Chicken with Mozzarella

4 boneless, skinless chicken breasts

8 oz fresh mozzarella cheese, cut into 1-inch sticks

8 slices of crispy bacon

1 cup fresh spinach, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon balsamic glaze (for drizzling, optional)

Instructions
 

Prepare the Chicken: Preheat your oven to 375°F (190°C). Butterfly each chicken breast by slicing it horizontally, creating a pocket without cutting all the way through.

    Stuff the Chicken: Inside each chicken pocket, place 2 mozzarella sticks and a generous handful of chopped spinach. Make sure to distribute the filling evenly amongst all the chicken breasts.

      Season the Chicken: In a small bowl, mix together the garlic powder, onion powder, Italian seasoning, salt, and black pepper. Rub this seasoning mix generously over both sides of each stuffed chicken breast.

        Wrap the Chicken: Take two slices of bacon and tightly wrap them around each chicken breast. Start at one end, overlapping the bacon slightly as you go to ensure the chicken is well covered.

          Sear for Flavor: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped chicken breasts and sear them for about 3-4 minutes on each side until the bacon starts to brown and crisp up.

            Bake in the Oven: Transfer the skillet to the preheated oven and bake for about 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C). The bacon should be crispy and the cheese melted and bubbling out slightly.
