Ingredients

2 cans (15 oz each) of navy beans, drained and rinsed

1 can (15 oz) of black beans, drained and rinsed

1 cup diced onion

2 cloves garlic, minced

1 cup barbecue sauce (homemade or your favorite store-bought)

1/4 cup brown sugar

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon mustard powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup shredded cheddar cheese (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

In a large mixing bowl, combine the navy beans, black beans, sautéed onion and garlic mixture, barbecue sauce, brown sugar, smoked paprika, ground cumin, mustard powder, cayenne pepper, corn, and red bell pepper. Stir until well combined. Season with salt and pepper to taste.

Pour the baked bean mixture into a greased 9x13 inch casserole dish. If using, sprinkle the shredded cheddar cheese evenly over the top.

Cover the casserole with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the casserole is heated through.

Once done, remove from the oven and let it sit for 5-10 minutes before serving. Garnish with fresh parsley if desired.

Serve hot as a hearty main dish or a side with your favorite barbecued meats.
