1 lb (450g) boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

2 cups panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

2 tbsp olive oil (or cooking spray)

Dipping sauces of your choice (honey mustard, BBQ, etc.)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Chicken: Cut the boneless chicken breasts into bite-sized pieces, approximately 1 to 2 inches. This helps ensure they cook evenly.

      Set Up Breading Station: In three separate shallow bowls, set up your breading station:

        - In the first bowl, place the flour seasoned with salt, pepper, garlic powder, onion powder, and smoked paprika.

          - In the second bowl, beat the two eggs until well combined.

            - In the third bowl, add the panko breadcrumbs and cayenne pepper (if using).

              Bread the Chicken: Take each piece of chicken, first dredge it in the flour mixture, shaking off excess flour. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the panko breadcrumbs, pressing gently to adhere well. Repeat this process for all chicken pieces.

                Arrange on Baking Sheet: Once all chicken pieces are breaded, place them onto the prepared baking sheet. Make sure to leave space between each nugget for even baking. Drizzle with olive oil or spray lightly with cooking spray.

                  Bake: Bake the chicken nuggets in the preheated oven for 15 minutes. After 15 minutes, flip the nuggets and bake for an additional 10-15 minutes or until golden brown and cooked through (internal temperature should be at least 165°F or 75°C).

                    Serve: Once baked, remove from the oven and let cool slightly. Serve the chicken nuggets warm with your favorite dipping sauces.
