Baked Feta Pasta

200g (7 oz) feta cheese, block

300g (10.5 oz) pasta (such as penne or fusilli)

250g (9 oz) cherry tomatoes, halved

4 cloves garlic, minced

½ cup extra virgin olive oil

1 tsp red pepper flakes (adjust to taste)

1 tsp dried oregano

Fresh basil leaves, for garnish

Salt and pepper, to taste

Zest of 1 lemon (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large oven-safe baking dish, place the block of feta cheese in the center. Surround it with the halved cherry tomatoes and minced garlic.

      Season the Dish: Drizzle the olive oil over the feta cheese and tomatoes. Sprinkle the red pepper flakes, dried oregano, salt, and pepper evenly over the top.

        Bake: Transfer the baking dish to the preheated oven and bake for about 30 minutes, or until the feta is golden and slightly melty, and the tomatoes are blistered.

          Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

            Combine: Remove the baking dish from the oven. Using a fork, gently mash the feta cheese and tomatoes together to create a creamy sauce. Add the cooked pasta to the dish, and toss gently to combine. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.

              Serve: Divide the pasta into bowls and garnish with fresh basil leaves and a sprinkle of lemon zest for an added splash of flavor.
