Baked Feta Pasta Recipe

200g feta cheese

300g cherry tomatoes

3 cloves garlic, minced

300g pasta (penne or fusilli)

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, place the cherry tomatoes and feta cheese in the center. Drizzle the olive oil over them, and sprinkle with minced garlic, oregano, red pepper flakes (if using), salt, and black pepper.

      Bake in the preheated oven for about 25-30 minutes, or until the tomatoes burst and the feta becomes golden and creamy.

        While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

          Once the feta and tomatoes are baked, remove from the oven and gently mash the feta and tomatoes together with a fork to create a creamy sauce. If the mixture is too thick, add some reserved pasta water to reach your desired consistency.

            Toss the cooked pasta into the baking dish with the feta and tomato sauce. Stir well to combine, ensuring the pasta is coated in the sauce.
