Baked Feta Potatoes

4 medium-sized Yukon Gold potatoes

200g block of feta cheese

3 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the potatoes thoroughly and pat them dry. Prick each potato a few times with a fork. Place them on a baking sheet lined with parchment paper.

      Bake the Potatoes: Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are fork-tender. You can test them by inserting a fork – it should glide in easily.

        Prepare the Feta Topping: While the potatoes are baking, in a mixing bowl combine the olive oil, dried oregano, garlic powder, smoked paprika, salt, and pepper. Stir until all the spices are well mixed.

          Add Tomatoes: Once the feta and potatoes are ready, gently fold in the halved cherry tomatoes with the olive oil mixture, ensuring they are coated evenly.

            Assemble the Dish: When the potatoes are done, remove them from the oven and carefully cut a slit along the top of each potato. Use a fork to slightly mash the insides, creating space for the topping.

              Top with Feta: Place the block of feta cheese in the center of each potato slit, then spoon the tomato and olive oil mixture over the feta and into the slits of the potatoes.
