Baked Fig Jam Meatballs

1 pound ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (plain or Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup fig jam

1/4 cup balsamic vinegar

1 tablespoon olive oil

Fresh rosemary or thyme, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare Meatball Mixture: In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until fully incorporated but avoid overmixing.

      Form Meatballs: Use your hands to shape the mixture into meatballs, approximately 1 to 1.5 inches in diameter. Place them evenly spaced on the prepared baking sheet.

        Make the Fig Sauce: In a small bowl, whisk together the fig jam, balsamic vinegar, and olive oil until smooth. This will be your glaze.

          Bake Meatballs: Place the meatballs in the preheated oven and bake for about 20 minutes, or until they are cooked through and reach an internal temperature of 160°F (70°C).

            Glaze the Meatballs: After 20 minutes, remove the meatballs from the oven and brush them generously with the fig glaze using a pastry brush. Return the meatballs to the oven and bake for an additional 10 minutes, allowing the glaze to caramelize slightly.
