Ingredients

For the Donuts:

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup buttermilk (or milk with 1/2 tsp vinegar added)

1 large egg

2 tablespoons unsalted butter, melted

Zest of 1 lemon

1 cup fresh blueberries (or frozen, thawed and drained)

For the Lemon Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and lemon zest until smooth.

Incorporate Wet into Dry: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix. Gently fold in the blueberries, ensuring they're evenly distributed throughout the batter.

Fill Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full. You can also use a piping bag for a cleaner fill.

Bake: Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when lightly pressed and are golden brown.

Cool the Donuts: Once baked, remove the pan from the oven and let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Lemon Glaze: In a small bowl, whisk together the powdered sugar, lemon juice, lemon zest, and vanilla extract until the glaze is smooth. Adjust the consistency if needed by adding a little more lemon juice or sugar.

Glaze the Donuts: Once the donuts are completely cooled, dip the tops in the lemon glaze or drizzle it over the donuts using a spoon.

Serve and Enjoy: Allow the glaze to set for a few minutes before serving. Enjoy your Baked Lemon Blueberry Donuts with a cup of tea or coffee!
