Baked Lemon Dill Cod Fillets

4 cod fillets (6 oz each)

3 tbsp olive oil

2 lemons (1 for juice, 1 sliced into rounds)

3 cloves garlic, minced

2 tbsp fresh dill, chopped (or 1 tbsp dried dill)

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika (smoked or sweet)

1/4 cup panko bread crumbs

Fresh dill sprigs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: Lightly grease a baking dish with a little olive oil or line it with parchment paper for easy cleanup.

      Make the Marinade: In a small bowl, whisk together the olive oil, juice of one lemon, minced garlic, chopped dill, salt, pepper, and paprika.

        Marinate the Cod: Place the cod fillets in the prepared baking dish. Pour half of the marinade over the fillets, ensuring each piece is well coated. Let it marinate for about 15 minutes to absorb the flavors.

          Add Lemon Slices: After marinating, place lemon slices on top of the cod fillets, along with any remaining marinade.

            Top with Panko: Sprinkle the panko bread crumbs evenly over the fillets for a crispy topping.

              Bake: Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

                Garnish and Serve: Remove from the oven, garnish with fresh dill sprigs if desired, and serve hot. This dish pairs wonderfully with steamed vegetables or a fresh salad.
