2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

2 cups almond milk (or any milk of choice)

1 large ripe banana, mashed

1/3 cup pure maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 ½ cups mixed berries (fresh or frozen; blueberries, raspberries, strawberries)

Optional toppings: nuts, seeds, or a dollop of yogurt

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with silicone or paper liners.

    In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt until well combined.

      In a separate bowl, whisk together the almond milk, mashed banana, maple syrup, and vanilla extract until the mixture is smooth.

        Pour the wet ingredients into the dry ingredients and stir until everything is evenly combined. Gently fold in the mixed berries, being careful not to crush them.

          Scoop the oatmeal mixture into the prepared muffin tin, filling each cup about three-quarters full.

            Bake in the preheated oven for about 25-30 minutes, or until the tops are set and lightly golden.

              Once baked, allow the oatmeal cups to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.

                Enjoy them warm or store them in an airtight container in the fridge for up to a week! They can be reheated in the microwave for a quick breakfast.
