Ingredients
  

4 salmon fillets (6 oz each)

1 cup fresh pineapple, diced

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons olive oil

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 lime, juiced

1 teaspoon sesame oil

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh cilantro or parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Marinade: In a medium bowl, whisk together the soy sauce, honey, olive oil, grated ginger, minced garlic, lime juice, sesame oil, salt, and pepper.

      Marinate Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well-coated. Allow to marinate for at least 15 minutes, or up to 1 hour in the refrigerator for more flavor.

        Arrange Pineapple: In a baking dish, arrange the diced pineapple, creating a bed for the salmon.

          Place Salmon: After marinating, remove the salmon from the marinade (but reserve the marinade) and place the fillets on top of the pineapple in the baking dish.

            Bake: Spoon some of the reserved marinade over the salmon and pineapple. Cover the dish with aluminum foil to keep the salmon moist, and place it in the preheated oven. Bake for about 20-25 minutes, or until the salmon flakes easily with a fork.

              Broil (Optional): For a crispy top, remove the foil and broil the salmon for an additional 2-3 minutes, watching closely to prevent burning.

                Garnish and Serve: Once baked, remove from the oven, and let it rest for a few minutes. Garnish with sliced green onions and fresh cilantro or parsley before serving.
